Are you a whiz in the kitchen? Share your best spicy recipes with us. Post them here for the chance to win exclusive TABASCO® brand kitchen goodies. Closing date for entries is the 31st October 2009. TABASCO® Recipe Competition T’s and C’s.

The competition is open to members registered on www.TABASCOfanclub.co.uk and on the TABASCO ® forum who are aged 18 years or over and residents of Great Britain (England, Wales and Scotland), the Channel Islands or the Isle of Man, excluding professional chefs, and employees and their immediate families of the promoter, its agents or anyone else professionally connected with the competition.

To enter: TABASCO® Fan Club members can enter the competition by uploading their favourite TABASCO® recipes onto the TABASCO® forum. The TABASCO® UK Chef will shortlist 3 finalists and their recipes will be posted on the forum for TABASCO® fan club members to vote for their favourite recipe.

No purchase is necessary to enter, but only one entry per person is allowed.

Prize details: The prize is exclusive TABASCO® branded kitchenware including: 1 x TABASCO® Branded Apron, 1 pair of TABASCO® Branded Oven Gloves, 1 x TABASCO® Branded Tea Towel, 1 x TABASCO® Branded Metal Serving Spoon and 1 x TABASCO® Branded Metal Spatula/Fish Slice. In the event of circumstances outside of its control, the promoter reserves the right to substitute prizes with similar alternatives.

The closing date for entries is 31st October 2009.

The three shortlisted entrants will be advised within 14 days of the closing date and entries will be on the forum for voting until 30th November 2009. The overall winner will be notified within 14 days of the close of voting. The promoter will not be liable for any failure of receipt of entries. The promoter takes no responsibility for any entries that are lost, delayed, illegible, corrupt, damaged, incomplete or otherwise invalid. Entries will not be acknowledged or returned.

No cash or other alternative prize is available.

This one’s really healthy and as spicy as you like!

Spicy lentil and veggie curry

Ingredients:Three peppers of different colours, finely chopped
Two onions, finely chopped
Two cloves of garlic, mashed
150g dried red split lentils
500ml stock, made up from a stick cube
One tin of chopped tomatoes
Tbsp olive oil
Tsp Cumin
Tsp Turmeric
As much TABASCO as you like!
Tbsp Mango chutney
Fresh chopped coriander

Method: Heat the olive oil in a pan and add the onion and garlic, fry until translucent. Add the peppers and fry for a further 5 minutes.

Add the lentils, stock, tomatoes and spices and cook until the lentils are soft. (about 40 mins)

Stir in mango chutney and coriander and add more TABASCO to taste.

Serve with chopped up naan breads – lovely!

Fun in the kitchen with teenagers...


Spicy TABASCO Lamb Burgers

Serves: 4-6
Ingredients
• 800g minced lamb
• 1 egg lightly whisked
• 1 small onion, finely chopped
• 1/2 tsp mustard seeds, crushed
• 1 red pepper finely chopped
• 15g fresh tarragon, chopped
• 25 g crumbled fetta cheese
• 1/2 tsp black pepper
• Splash of TABASCO

Method
Place the lamb in a large bowl and add the remaining ingredients. Mix it all together until just combined.
Shape the mixture into four burgers about 200g each or six smaller burgers.
The burgers can now be cooked either on a heated griddle pan or non-stick frying pan with a bit of oil, during the summer time cook these on the bbq
Cook the burgers for about 5 minutes on each side, turning them once only.
Serve with burger baps and salad.
Extra TABASCO on the side for that hotter bite!

TABASCO® Recipe Competition

This recipe is easy and yet effective, it has been in my family for generation.

TABASCO sauce with fresh oyster.

All you need is :-

Oyster (open the oyster - leave the half shell on the oyster)
Lemon wedge juice
dash of TABASCO sauce

And enjoy.... heaven....

Chinese Chicken


Directions:
Stir fry the chicken. Add all remaining ingredients except the cornstarch and water to the chicken. Thicken and coat the chicken with the thickening mixture. Add the cornstarch/water solution and cook until bubbly. Serve.



Ingredients:
1/4 tsp. Garlic powder
1/2 tsp. Ginger
1 to 2 tsp. Soy Sauce
1 Chicken Breast
1 tsp. Sesame oil
1 Tbsp. Sesame Seeds
1 Tbsp. Fruit Jelly
1 tsp. Sugar
~ 1 tsp. Cornstarch
~ 2 Tbsp. water
5 - 10 drops of TABASCO Sauce

Serves 2
Ingredients:
3 Lamb leg steaks
Big handfull of fresh peas (can use frozen too)
1 heaped teaspoon oregano
1 heaped teaspoon thyme
2 teaspoons of mint sauce
1/2 teaspoon rosemary
3 teaspoons of sweet chilli sauce
2 teaspoons of TABASCO (or you can use more if you like)
100g of feta cheese (cut into small cubes or crumbled up)
1 red onion (finely sliced)
salt and pepper
melted butter
6 sheets of filo pastry
Method
Pre heat oven to 200 degrees
Trim the thick fat off the lamb and then cut the lamb into chunks
Place lamb in a bowl with the mint sauce, herbs,TABASCO and chilli sauce
Fry the onions in a little butter until soft, then set a side
Fry the lamb mix for a few minutes until browned, add the onions and remove from the heat, add the peas and feta then season to taste with salt and pepper.
to create the parcels you need to layer 3 sheets of filo together for each parcel, brushing each layer with some melted butter.
place half the lamb mix in the centre of each filo stack and then carefully roll or fold it up before brushing each parcel with melted butter
Cook in the oven until golden and crispy (about 15-20 minutes)
Serve with your choice of veg!

cajun chicken wings

These delicious wings are marinated in white wine and TABASCO® Brand Pepper Sauce, then slow roasted with dark brown sugar, chilli, paprika, tomato puree, onions and garlic and extra TABASCO® Brand Pepper Sauce to give a wonderful rich and vibrant sticky coating. The ultimate finger food.

Serves: 4

450g/1lb chicken wings
200ml/7floz dry white wine
1 tbsp TABASCO® Brand Pepper Sauce
1 onion, peeled and finely chopped
1 clove garlic, peeled and crushed
75g/3oz dark brown sugar
1 red chilli, seeded and chopped
1 heaped tsp paprika
1 tbsp tomato puree
salt and freshly ground black pepper
1 tbsp freshly ripped coriander leaves
extra TABASCO® Brand Pepper Sauce for serving

Method:

1. Cut wing tips from wings and discard. Halve remainder at the joint to give two pieces per wing. Place in a bowl. Pour over white wine and TABASCO® Sauce and leave for 30 minutes.

2. Transfer to a roasting dish with a slotted spoon. Add onion, garlic, sugar, chilli, paprika and tomato puree to wine mix and stir. Season. Pour over wings. Bake in a pre-heated oven Gas 5, 375F, 190C for 30 minutes, covered with foil. Remove foil and continue cooking, turning wings over occasionally, until sauce is reduced to a sticky, aromatic coating. Scatter over coriander and serve sprinkled with extra TABASCO® Sauce.

Scrambled eggs with TABASCO.

Beautiful, and couldn't be easier.

You need:
3 fresh, free range, organic eggs
large knob of butter (30g or so)
splash of TABASCO
salt
pepper

Place a smallish pan over a very low heat and add the butter.
Once the butter has melted, beat the eggs and add to the pan.
Stirring continuously to avoid big lumps, allow the eggs to cook slowly.
You want the eggs to be just set, like the texture of runny porridge.
Season with salt, a little pepper and a splash of TABASCO.
Serve on buttered toast.

Hot Pepper Soup

6 red peppers, halved and deseeded
1 tin chopped tomatoes
2 teapoons TABASCO sauce
2 tablespoons worcestershire sauce
2 onions, chopped finely
low fat cooking spray
1 tablespoon fennel seeds
3 crushed garlic cloves
1 red chilli, deseeded and chopped
2 pints vegetable stock
basil to garnish

Grill peppers skin side up for 5-10 minutes until blistering.
Meanwhile stir-fry the onions and fennel seeds in the low fat cooking spray.
Place peppers into pan with onion mixture, along with all other ingredients (other than basil)
Bring to the boil and then simmer for 10 minutes.
Liquidise the soup and sprinkle with basil.

Mmmmmmmmmmmmmmm!!!
